Execution Timeline

9 SEQUENTIAL TIMED STEPS

1PREP THE INGREDIENTS
8 MIN

Wash the toor dal, chop the tomatoes and coriander leaves, and measure out the rasam powder, turmeric, and tempering spices.

2SOAK THE TAMARIND
5 MIN

Soak the tamarind in warm water and let it sit until it softens and can be easily squeezed apart.

Tip: Warm water speeds up softening compared to room-temperature water
3BOIL THE TOOR DAL
15 MIN

Boil the washed toor dal in water with a pinch of turmeric until the lentils turn completely soft and mushy.

Tip: The dal is ready when it mashes easily with the back of a spoon
4MASH THE DAL
2 MIN

Mash the boiled toor dal well with the back of a ladle or a whisk until mostly smooth, then set it aside.

5EXTRACT THE TAMARIND WATER
3 MIN

Squeeze the softened tamarind in its soaking water to release the pulp, then strain out the fibers and seeds to get a smooth tamarind extract.

Tip: Squeeze thoroughly — a weak extract makes for a flat-tasting rasam
6SIMMER OFF THE RAW SMELL
6 MIN

Combine the tamarind extract, chopped tomatoes, rasam powder, turmeric, and jaggery in a saucepan and simmer until the raw tamarind smell disappears and the tomatoes soften.

Tip: You’ll notice the sharp raw smell mellow into a rounder, cooked tang
7ADD THE DAL AND SIMMER UNTIL IT FROTHS
5 MIN

Stir the mashed dal and salt into the tamarind mixture, then let it simmer gently until small froth bubbles appear on the surface, and turn off the heat immediately after.

Tip: Rasam should never be allowed to reach a hard rolling boil once it froths, or it loses its delicate flavor
8TEMPER THE SPICES
2 MIN

Heat the ghee in a small tempering pan, add the mustard seeds and let them splutter, then add the cumin seeds, dried red chilies, curry leaves, and asafoetida.

Tip: The mustard seeds are done spluttering when they stop popping audibly
9FINISH WITH TEMPERING AND GARNISH
2 MIN

Pour the hot tempering over the rasam, stir in the chopped coriander leaves, and serve immediately while still hot.
